Ingredients

1 lb French haricots vert ( french green beans )
1/2 lb small English cucumber ( persian can also be used )
1/2 cup coarsely chopped fresh dill
1/4 cup finely chopped red onion
2 tablespoons olive oil
2 tablespoons lemon juice
1/2 teaspoon salt
1/2 teaspoon sugar
1 teaspoon Dijon mustard

This Haricots Verts, Red Potato, and Cucumber Salad is a light and refreshing dish that's perfect for summer. Instructions

1.In a large pot of boiling salted water, cook the potatoes until tender, about 12-15 minutes. Drain and rinse in cold water. Once cooled, slice the potatoes in half.
2.In the same pot of boiling salted water, cook the haricots verts until crisp-tender, about 3-4 minutes. Drain and rinse in cold water. Once cooled, slice the haricots verts in half.
3.Slice the cucumber in half lengthwise, then slice each half into thin half-moon shapes.
4.In a large bowl, whisk together the olive oil, lemon juice, salt, sugar, mustard, and pepper.
5.Add the potatoes, haricots verts, cucumber, dill, and red onion to the bowl with the dressing. Toss to combine and serve chilled.
