Instructions

1.Preheat the oven to 375°F (190°C). Grease a 2 1/2-quart souffle dish with cooking spray.
2.Cut off the top of the garlic head to expose the cloves. Place the garlic on a piece of aluminum foil and drizzle with olive oil. Wrap the foil tightly to form a sealed packet and roast in the oven for 40-50 minutes, or until soft and golden brown. Let cool, then squeeze the roasted garlic out of the cloves and set aside.
3.Sprinkle the breadcrumbs in the souffle dish in an even layer, rotating the dish to coat the sides as well as the bottom.
4.In a medium saucepan, whisk together the flour, salt, and milk over medium heat until the mixture thickens, about 3-4 minutes. Remove from heat and stir in the Parmesan cheese, rosemary, and roasted garlic.
5.In a large mixing bowl, beat the egg yolks until they are thick and pale. Stir in the Parmesan mixture.
6.In a separate bowl, beat the egg whites and cream of tartar until soft peaks form. Gently fold half of the egg whites into the Parmesan mixture until just combined, then fold in the remaining egg whites until no white streaks remain.
7.Pour the mixture into the prepared souffle dish and bake for 25-30 minutes, or until puffed and golden brown. Serve immediately.
