Ingredients

1 roasting chickens
2 lemons , halved
2 large garlic cloves , minced
3 tablespoons unsalted butter
1 tablespoon seasoning , mixed ( she recommends a mixture of sumac , sesame , cumin , coriander and fennel seeds , ground )
1 1/2 tablespoons coarse salt

fresh ground pepper
olive oil
3 -4 sprigs thyme
Djedj Mechoui (Algerian Poulet Roti-Roast Chicken) is a traditional Algerian dish consisting of a whole roasted chicken stuffed with thyme, lemon, and garlic. The chicken is then seasoned with a spice blend made of sumac, sesame, cumin, coriander, and ground fennel seeds. The result is a flavorful and aromatic dish that's perfect for any special occasion or weekend dinner. The dish is typically served with a side of couscous or rice.

Instructions

1.Preheat your oven to 220C/350F.
2.Unwrap the chicken and discard any giblets. Rinse it inside and out and pat dry with paper towels.
3.Rub the chicken with olive oil and sprinkle with the coarse salt and freshly ground pepper.
4.Put the chicken in the roasting pan on a rack and stuff with the thyme, lemon halves, and minced garlic.
5.Mix the seasoning mix with butter to make a paste and break it into small pieces.
6.Rub the chicken with this paste and place it in the oven for 1 hour and 30 minutes,
7.Take it out and let it rest for 10 minutes before carving. Serve hot and enjoy!
