Ingredients

100 g egg yolks
65 g sugar
500 ml double cream
150 g cherries , ie . griottines
1 vanilla bean
sugar , to caramelise
Griottines Creme Brulee is a classic French dessert that is perfect for any occasion. The custard is made with egg yolks, sugar, and double cream, and flavoured with vanilla bean. Instructions

1.Preheat the oven to 300°F (150°C).
2.In a bowl, whisk together the egg yolks and sugar until pale and thick.
3.Scrape the seeds out of the vanilla bean and add them to the egg mixture along with the double cream.
4.Whisk everything together until fully combined.
5.Place the cherries at the bottom of six ramekins and pour the custard over them.
6.Put the ramekins in a baking dish and pour hot water into the dish until it comes halfway up the sides of the ramekins.
7.Bake for 30-40 minutes or until the custard has set.
8.Remove from the oven and let cool. Refrigerate for at least 1 hour or until chilled.
9.Just before serving, sprinkle sugar over the top of each ramekin and use a kitchen torch to caramelise the sugar until golden brown.
