1/2 cup olive oil
2 garlic cloves , minced

4 angus boneless strip steaks , 10 ounces each
2 idaho baking potatoes , 8 to 10 ounces each
1 1/2 lbs red potatoes , scrubbed and quartered
1/4 cup warm milk
1/2 cup sour cream , at room temperature
1/4 cup butter , at room temperature
6 tablespoons freshly grated parmesan cheese
nutmeg , to taste
salt and pepper
1/4 cup butter
8 large shiitake mushrooms , sliced
2 tablespoons finely minced shallots
1 cup white wine
1/4 cup Bourbon
1 cup heavy cream
1/2 cup beef stock
salt & freshly ground black pepper
2 teaspoons sliced chives , for garnish

Instructions

1.In a small mixing bowl, combine olive oil, garlic, basil, salt, and black pepper. Coat the strip steaks with this mixture and refrigerate for at least an hour.
2.In a large pot, add the quartered red potatoes and whole Idaho potatoes and boil until tender, approximately 25 minutes. Drain excess water and mash the potatoes with warm milk, sour cream, grated Parmesan cheese, butter, salt, pepper, and nutmeg to make mashed potatoes. Keep warm.
3.In a large sauté pan, melt butter over medium heat and add the sliced shiitake mushrooms and minced shallots. Cook until tender, then add the wine and Bourbon. Reduce by half, add beef stock and heavy cream, and cook until the sauce thickens. Season with salt and pepper to taste.
4.Heat a grill pan over high heat. Add the steaks and cook for 4–5 minutes until well-browned. Then flip and cook for another 4–5 minutes to achieve a medium-rare center. Slice the steaks and serve with mashed potatoes and mushroom sauce. Garnish with sliced chives if desired.
