Ingredients

1 tablespoon unsalted butter

2 sprigs fresh thyme , leaves only
1 box refrigerated pie dough , 2 rounds
3/4 cup heavy cream ( or half and half )
2 large eggs ( or l egg and 1/4 cup eggbeaters , egg white )
1/8 teaspoon pumpkin pie spice ( or pinch nutmeg )
1/2 cup finely grated gruyere cheese

Instructions

1.Preheat the oven to 350°F (180°C).
2.In a pan, melt the unsalted butter and then cook the leek over a medium heat for around 8 minutes until it's tender.
3.Add salt, black pepper, and fresh thyme leaves to the pan.
4.Roll the pie dough to a thickness of 1/8 inch (3mm) and cut out 12 circles.
5.Press the circles into a muffin tin and fill them with the leek mixture.
6.In a mixing bowl, whisk together the heavy cream, eggs, pumpkin pie spice, and grated Gruyere cheese.
7.Pour the mixture over the leek mixture.
8.Bake the mini quiches for 20-25 minutes until the tops turn golden brown. Let them cool for a few minutes before serving.
