Ingredients

1 large egg
10 tablespoons unsalted butter , softened
1/3 cup plus 1 tablespoon granulated sugar
1/4 teaspoon table salt
1 teaspoon vanilla extract
1 1/2 cups unbleached all-purpose flour
1 teaspoon large egg white , lightly beaten with 1 teaspoon water
4 teaspoons turbinado sugar ( see note )
French Butter Cookies-Sables(ATK) are a classic French cookie that is perfect for a tea party or any holiday occasion. French Butter Cookies-Sables(ATK) are very easy to make and require only a few simple ingredients, which makes them a great option for any home baker. Instructions

1.In a stand mixer fitted with paddle attachment, beat egg on medium-high speed until pale and frothy, about 1 minute.
2.Add butter and beat on medium-high speed until smooth and creamy, about 1 minute. Add granulated sugar and salt; continue to beat on medium-high speed until light and fluffy, about 3 minutes, scraping down bowl as needed.
3.Beat in vanilla until well combined, about 30 seconds. Reduce speed to low; add flour in 2 additions and mix until just combined.
4.Turn dough out onto countertop; divide in half. Roughly shape each half into 6- to 7-inch log. Place each log at bottom of 1 quart-sized resealable plastic freezer bag; press firmly into corners and smooth into even layer.
5.Holding onto open ends of bag with one hand and using ruler to create even 1/2-inch-thick layer of dough, use bench scraper held flush with inside of bag to slice any excess dough above ruler line. Seal bag and press dough into even thickness.
6.Chill dough logs until very firm, at least 1 hour and up to 24 hours or freeze for up to 1 month.
7.Adjust oven racks to upper-middle and lower-middle positions and heat to 350°F. Line 2 baking sheets with parchment paper or silicone baking mats.
8.Remove dough from bags. Cut chilled dough into 1/4-inch-thick slices and place 1 inch apart on prepared sheets (reshape and reroll scraps once (dough chill) to cut out as many cookies as possible).
9.Brush tops of cookies lightly with egg white d mixture and sprinkle each with about 1/8 teaspoon turbinado sugar.
10.Bake cookies until golden brown, 13 to 16 minutes, switching and rotating sheets halfway through baking. Let cookies cool on sheets for 5 minutes and then transfer to wire rack to cool completely. Serve and enjoy the buttery, golden treats!
