Asparagus tarts are a popular dish in French cuisine, often served as an appetizer or side dish. Asparagus is a seasonal vegetable that is enjoyed in the spring and summer months, when it is fresh and tender. The combination of roasted asparagus, caramelized onions, and gruyere cheese on a crisp puff pastry creates a perfect harmony of flavors and textures. Asparagus is a versatile vegetable that can be steamed, grilled, roasted, or boiled. It can also be added to soups, salads, quiches, and stir-fries. Asparagus tarts are easy to customize to suit individual tastes, such as by adding bacon, mushrooms, tomatoes, or herbs.

Instructions

1.Preheat oven to 425 degrees F (220 degrees C)
2.Place the asparagus spears on a baking sheet and drizzle with 1 tablespoon of olive oil, herbes de Provence, salt, and pepper. Toss to coat and roast for 8-10 minutes until lightly browned and tender.
3.In a large frying pan, heat 1 tablespoon olive oil over medium heat. Add onions and cook until golden brown and caramelized, stirring frequently for about 10 minutes.
4.Roll out the puff pastry sheets on a cutting board or sheet of parchment paper and slice each sheet into 6 equal size rectangles. Use a sharp knife to score a border around each rectangle about 1/2 inch from the edge. Brush the borders with the beaten egg and sprinkle the shaved gruyere cheese over the center of each rectangle.
5.Top with the asparagus spears and caramelized onions, pressing gently to adhere.
6.Bake for 20 minutes until the pastry is puffed and golden brown. Serve warm or at room temperature.
