Oyster Bisque with Mushrooms and Wild Rice is a delicious and hearty soup that is perfect for cold winter nights or as a comforting meal on a rainy day. The creamy broth is loaded with wild mushrooms, shucked oysters, and aromatic thyme and nutmeg, and is thickened with a roux made from butter and flour. The dish gets its distinct flavor and texture from the addition of wild rice, a gluten-free grain that is native to North America. Wild rice has a nutty flavor and a chewy texture that pairs perfectly with the tender oysters and meaty mushrooms, making this bisque a satisfying and flavorful meal.

Instructions

1.Put the dried wild mushrooms in a bowl and pour the boiling water over them. Let soak for 1 hour, then drain, reserving the soaking liquid. Chop the rehydrated mushrooms and set aside.
2.Melt the butter in a large pot over medium-high heat. Add the celery, onion, nutmeg, and thyme, and cook, stirring occasionally, until the vegetables are soft, about 8 minutes.
3.Add the chopped mixed mushrooms and flour, and cook, stirring constantly, until the flour is incorporated and the mixture is thickened, about 2 minutes.
4.Gradually whisk in the fish stock or clam juice, mushroom soaking liquid, and sherry wine.
5.Bring the mixture to a simmer and cook for 15-20 minutes, until the soup has thickened slightly.
6.Add the half-and-half cream, salt, and pepper, and simmer for another 10 minutes.
7.Add the shucked oysters and wild rice, and cook for another 5 minutes, stirring occasionally.
