Ingredients

1 3/4 cups mineral water , room temperature
1 1/2 teaspoons fleur de sel ( sea salt )
1 lb high-fat unsalted butter , plus
2 tablespoons high-fat unsalted butter , chilled , plus more melted butter for tart rings
5 cups all-purpose flour
1 tablespoon fresh yeast , firmly packed
3 cups sugar , plus more for rolling
Kouing Aman is a traditional Breton pastry that originated from the port city of Douarnenez in the 1800s. Its name means 'butter cake' in Breton, which is a reflection of its high butter content. Kouing Aman Pastry is made with a laminated dough that is similar to croissant dough, but with extra sugar and butter folded in between the layers. The result is a pastry with a caramelized crust and a soft, chewy interior that is sure to satisfy your sweet tooth. Kouing Aman Pastry gained fame when the baker Gwenael Biger started selling it in his bakery in Douarnenez, and it has since become a popular dessert in Brittany and beyond.

Instructions

1.In a large mixing bowl, add mineral water, fleur de sel, flour, and yeast. Mix thoroughly to form a dough.
2.Roll out the dough on a flat surface to form a large rectangular shape.
3.Sprinkle sugar evenly over the dough and fold it into layers.
4.Repeat the process several times until you get many layers of dough and sugar.
5.Roll out the dough and cut it into small circles.
6.Grease the tart rings and place the dough circles into them.
7.Chill the tart rings in the fridge for 40 minutes.
8.Preheat the oven to 200°C and bake the Kouing Aman Pastry for 30-40 minutes or until golden brown.
