Ingredients

olive oil
2 leeks , washed and thickly sliced
2 parsnips , peeled and cut into chunks
4 bay leaves
8 garlic cloves , unpeeled
1 onion , peeled and chopped
2 sprigs thyme
200 g mushrooms , cleaned
1 kg chicken piece , skin removed
1 sweet potato , peeled and chopped
salt and pepper
Chicken, Parsnip and Mushroom Casserole is a warm and comforting dish that is perfect for a chilly evening. Instructions

1.Preheat the oven to 180C/160C fan/gas 4.
2.Heat the olive oil in a casserole dish on the hob. Add the leeks, parsnips, bay leaves, garlic cloves, onion and thyme. Stir well and cook for a few minutes until the vegetables start to soften.
3.Add the mushrooms and chicken. Pour in 300ml water and bring to a simmer.
4.Cover with a lid and transfer to the oven. Bake for 1 hour.
5.Add the sweet potato to the dish and cook for a further 30 minutes until the chicken is cooked through and tender.
6.Season with salt and pepper to taste before serving.
