Ingredients

1 1/4 lbs medium shrimp , shelled and deveined , shells reserved
1/4 cup unsalted butter
1/2 cup Pernod
2 quarts water
1 bay leaf ( not California )
3 carrots , chopped
2 celery ribs , chopped
1 medium onion , chopped
2 tablespoons long-grain rice
2 tablespoons tomato paste
3/4 teaspoon cayenne
2 teaspoons salt
1/3 cup heavy cream
fresh lemon juice
chopped fresh chives

Instructions

1.In a large pot, melt the butter over medium heat.

4.Add the water, bay leaf, and salt to the pot. Bring to a boil and reduce heat to low. Simmer for 40 minutes.

6.Use a blender to puree the soup in batches until smooth.
7.Return the soup to the pot and add the heavy cream and Pernod. Heat over low heat until warmed through. Do not boil.
8.Add the shrimp to the pot and cook for a few minutes until pink and cooked through.
9.Add some fresh lemon juice and season with salt and pepper to taste.
10.Serve in bowls and sprinkle with chopped fresh chives.
