1/2 red onion , thinly sliced
2 garlic cloves , chopped
120 g feta , crumbled
2 tablespoons port wine
2 tablespoons fresh curly-leaf parsley , finely chopped
salt and pepper , to taste

Instructions

1.Soak the dried mushrooms in boiling water for 10 minutes, then drain and chop them finely.
2.In a large pan, heat some oil and cook the sliced onion and chopped garlic for a few minutes until softened.
3.Add the fresh and chopped mushrooms and cook for 10-15 minutes until tender and any liquid has evaporated.
4.Add the rehydrated chopped mushrooms, crumbled feta cheese, port wine, and chopped parsley to the pan and stir to combine.
5.Cook for another 5-10 minutes until everything is heated through and any remaining liquid has cooked off.
6.Transfer the mushroom mixture to a food processor and pulse until it has a smooth pate consistency.
7.Season with salt and pepper to taste.
