6 boneless chicken breast halves ( skinless & trimmed )
1 cup chopped leek , white parts only
1/2 cup diced celery
1 cup cored peeled cored peeled seeded and diced tomato
1 lemon , zest of , grated
2 garlic cloves , sliced

1 tablespoon minced fresh thyme
salt & freshly ground black pepper ( to taste )
24 -30 fresh spinach leaves , washed , dried , stems removed
6 tablespoons dry white wine

Instructions

1.Preheat oven to 400°F.
2.Fold each of six 15x12-inch pieces of parchment in half to form a 12-inch square.
3.Open squares; on one half of each square, place a sixth of the spinach and a chicken breast.
4.Season with salt and pepper, then top with a 1/6 of the tomatoes, garlic, leeks, scallions, celery, thyme, and lemon zest.
5.Splash each breast with 1 tablespoon wine.
6.Fold empty side of parchment over chicken and, starting with rounded end, fold and crimp edges of parchment together to seal.
7.Place packets on baking sheet.
8.Bake chicken until packets are puffed and chicken is cooked through, 25–28 minutes. Transfer to plates, being careful not to pierce packets; serve with hot crusty bread or boiled potatoes.
