4 -5 lbs meaty beef bones ( Get a frozen `` bag of bones '' from grocery or ask your butcher )
2 onions , unpeeled
2 carrots , unpeeled cut into two inch pieces
2 celery ribs , cut into two inch pieces ( including leaves )
water
bouquet garni ( see instructions below )
1/4 cup finely chopped peeled onion
2 tablespoons finely chopped peeled carrots
2 tablespoons finely chopped celery
3 tablespoons all-purpose flour
3 peppercorns
2 tablespoons chopped parsley
3/4 cup diced tomato ( or tomato puree )
1/4 cup chopped mushroom
1/4 cup dry red wine
2 tablespoons butter
1 cup thinly sliced mushroom
3/4 cup dry red wine or 3/4 cup madeira wine

Instructions

1.Preheat the oven to 400°F.
2.Spread the beef bones, unpeeled onions, unpeeled carrots, and celery in a single layer on a baking sheet.
3.Roast the bones and vegetables for 30-45 minutes, or until golden brown.
4.Fill a large pot with water and add the roasted bones and vegetables, bouquet garni, finely chopped onion, finely chopped carrot, and finely chopped celery.
5.Bring the pot to a boil, then reduce heat and let simmer for at least 2 hours, stirring occasionally to skim off any impurities that rise to the surface.
6.Strain the broth and discard the solids, then return the broth to the pot.
7.In a separate pan, melt butter over medium heat and sauté mushrooms until they release their moisture and begin to brown.
8.Add tomato, red wine, and chopped parsley to the mushrooms, then let simmer until the liquid has reduced by half.
9.In a small bowl, whisk together flour and red wine or madeira to create a slurry.
10.Slowly whisk the slurry into the strained broth, then add the mushroom mixture to the pot.
11.Simmer for an additional 20-30 minutes, taste and season with salt and pepper as needed, then serve warm over your favorite meats or vegetables.
