Ingredients

8 large swiss chard leaves
1 1/2 lbs carrots , cut into chunks
12 asparagus spears ( find long ones )
2 small zucchini
16 green beans , trimmed
1 cup creme fraiche
salt and pepper , to taste
6 teaspoons gelatin powder
16 cherry tomatoes , halved
1 tablespoon fresh parsley , finely chopped
1 tablespoon fresh chervil , finely chopped
1 tablespoon fresh basil , finely chopped
1 small lemon , zest of
1 1/4 cups creme fraiche
Vegetable Terrine is a classic French dish that is perfect for lunch, picnics, or as a light dinner. This dish is made by layering cooked vegetables and setting them in a mold with gelatin. When the mold is removed, an elegant and colorful dish is created. The vegetable mixture is made with carrots, zucchini, asparagus, and green beans which are blended with creme fraiche and set with gelatin. The terrine is then topped with halved cherry tomatoes for a pop of color. Instructions

1.Preheat oven to 375 degrees F.
2.Blanch swiss chard leaves in boiling salted water for 30 seconds. Remove leaves from water and place them in cold water; drain well.
3.In a large pot, cook carrots in salted water until they are soft, about 20 minutes. In the last 5 minutes of cooking add the asparagus, zucchini and green beans to the pot.
4.Reserve 1/4 cup of the cooking liquid and then drain the vegetables. In a food processor, puree the vegetables with creme fraiche, salt, and pepper.
5.In a small bowl, stir together gelatin and reserved cooking liquid. Melt gelatin mixture in the microwave for about 10 seconds. Stir into the vegetable mixture.
6.Line a terrine dish with plastic wrap. Arrange half of the cherry tomatoes in the bottom of the terrine. Pour in vegetable mixture and cover with remaining cherry tomatoes.
7.Refrigerate for at least 4 hours.
8.Whisk together creme fraiche, parsley, chervil, basil, lemon zest, and salt. Chill until serving time. Serve with herb sauce.
