1 whole chickens , boned out
2 tablespoons oil
1 glass dry sherry
1/4 lb button mushroom , sliced
1 ounce butter

1 cup fresh breadcrumb
2 teaspoons parsley , chopped
1 teaspoon sage , chopped

Instructions

1.Firstly, heat the oven to 350°F.

6.Roll it and secure it with the help of string or toothpicks.
7.In a roasting pan, put the chicken, cover it lightly with oil, add the bouquet garni, and then put it in the oven to cook for about 1 hour and 30 minutes.
8.Once ready, remove from the oven and keep it in a warm place.
9.In a frying pan, melt the butter, add the sliced mushroom, then spread flour over it.
10.Cook the mixture over medium heat for about 15 minutes and then add the tomato puree.
11.Gradually add the chicken stock while stirring, once it's smooth bring to a boil and let it cook for a few more minutes.
12.Season to taste and serve with the chicken slices and the gravy. Bon appetit!
