Ingredients

1 cup flour
1 1/2 cups milk
2 eggs
1 teaspoon vegetable oil
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 teaspoon vanilla
1/2 teaspoon lemon juice
1 lb low-fat ricotta cheese
1/4 cup sugar or 1/4 cup Splenda sugar substitute
2 cups light sour cream
2 tablespoons sugar or 2 tablespoons Splenda sugar substitute
2 cups sliced fresh strawberries
Crepes are a popular breakfast dish in France and have made their way into the hearts of people all around the world. The addition of cheese blintz and fresh strawberries in this recipe takes the dish to a whole new level. The difference between a crepe and a blintz is that, while crepes are thin and pliable, blintzes are thicker and filled with cheese.

Instructions

1.Preheat the oven to 350°F.
2.In a large mixing bowl, mix together flour, milk, eggs, vegetable oil, salt, baking powder, vanilla and lemon juice, breaking lumps if any. Beat using an electric mixer or blend it in a blender until the mixture is frothy and smooth.
3.Heat a non-stick skillet over medium-high heat. Pour 1/4 cup of crepe batter on skillet, cook for 20 seconds and flip over and cook for another 10 seconds. Remove to a plate and repeat with the remaining batter, greasing the skillet when necessary.
4.In a separate mixing bowl, combine ricotta cheese and sugar or sugar substitute. Spoon this mixture onto each crepe and top with fresh strawberries. Fold the crepe envelope style and place in a greased baking dish.
5.Bake in the preheated oven for 10-12 minutes, or until lightly golden and heated through.
6.In a separate bowl, mix together sour cream and sugar or sugar substitute. Spoon sour cream mixture over hot crepes and serve immediately.
