Ingredients

2 1/4 lbs fresh tomatoes

2 1/2 - 3 cups milk
2 1/4 cups stale bread , crumbled
1 garlic clove , peeled and finely chopped
2 tablespoons fresh parsley leaves
4 egg yolks
1 1/2 tablespoons butter
4 egg whites

Instructions

1.Preheat the oven to 350°F.

3.Strain the tomato sauce to remove the solids, and transfer it to a mixing bowl. Discard the solids.

5.Add the chicken liver mixture to the tomato sauce along with the milk, bread crumbs, garlic, parsley leaves, egg yolks, and butter. Mix well.
6.In a separate mixing bowl, beat the egg whites until stiff peaks form.
7.Fold the egg whites into the tomato mixture.
8.Pour the mixture into a 9-inch greased souffle dish.
9.Bake for 30-35 minutes, until the souffle has risen and is golden brown.
