1 1/3 cups water
4 cups unbleached flour
1 1/2 teaspoons salt

1 teaspoon rosemary , finely minced
1 1/2 teaspoons fast-rising active dry yeast
1 tablespoon roasted garlic

Instructions

1.In a large bowl, combine flour, salt, sugar, lavender, rosemary and yeast.
2.Add 1 1/3 cups water and roasted garlic to the bowl, slowly stirring with a wooden spoon until a sticky dough forms.
3.Brush another large bowl with olive oil and transfer the dough to it. Cover bowl with plastic wrap and let it rise in a warm and draft-free area for 1-2 hours, until the dough doubles in size.
4.Preheat oven to 450°F (230°C). Place a baking stone or baking sheet inside the oven to preheat.
5.Cut the dough in half. Shape it into loaves and let proof for 20 minutes. Place the dough loaves onto a sheet of lightly floured parchment paper.
6.Dust the loaves with rosemary, lavender and coarse salt.
7.Score loaves with a sharp knife 4 times diagonally and slide parchment paper onto the baking stone or baking sheet.
8.Bake for 20-25 minutes or until loaves are browned and sound hollow when tapped on the bottom.
