Instructions

1.In a large bowl, combine the flour and salt. Make a well in the center.

In a pan, heat the sunflower oil and add the leeks. Cook for 5 minutes, stirring occasionally. Add the pancetta and cook for another 5 minutes while stirring.
5.Combine the sour cream, milk, eggs, and basil in a bowl. Season with salt and pepper. Roll the dough into a large rectangle, transfer onto a baking sheet, and pierce all over with a fork. Spread the leek and pancetta mixture over the dough, leaving a 1-inch (2.5 cm) border around the edges. Pour the sour cream mixture over the top.
