Ingredients

3 lbs waxy potatoes , peeled and thinly sliced ( such as Desiree , Golden Wonder , Maris Piper , Idaho or King Edward )
6 ounces gruyere cheese , grated
3/4 pint double cream
salt
fresh ground black pepper
2 -4 garlic cloves , peeled and crushed
2 sprigs fresh thyme
1 ounce butter
cheese , for topping ( optional )

Instructions

1.Preheat oven to 350°F.

5.Pour cream over potatoes, they should be just covered.
6.Top with grated cheese, and optional grated cheese.
7.Cover with foil and put in preheated oven.
8.Bake for 1 hour and 15 minutes.
9.Remove foil and bake for an additional 15 minutes until browned on top.
