Ingredients

1 leg of lamb
4 garlic cloves , thinly sliced
20 whole garlic cloves , peeled
56 ml olive oil
salt and pepper
2 small onions , thinly sliced
4 carrots , peeled
1 bouquet garni
225 ml dry white wine
225 g flour
225 ml water
Gigot De Sept Heures, or French Seven Hour Roast Lamb, is an iconic dish in French cuisine. The long cooking time allows the lamb to become meltingly tender, while the garlic and bouquet garni infuse the meat with flavor. Instructions

1.Preheat the oven to 160 C.
2.Cut small holes in the lamb and stuff them with slices of garlic. Rub the lamb with olive oil then salt and pepper.
3.Place the onion and carrot in a deep casserole dish.
4.Add the leg of lamb, bouquet garni, 20 whole garlic cloves and dry white wine.
5.Cover the casserole dish with a tight lid and bake in the oven for 7 hours.
6.Remove the lid and increase oven temperature to 220 C, cook for another 20 minutes.
7.Remove from the oven and place lamb on a serving dish, keep warm.
8.Remove and discard the bouquet garni then puree the vegetables and garlic in a blender.
9.Make the sauce by mixing flour and water until smooth, then add to the blended vegetables and garlic.
10.Simmer over low heat until the sauce thickens.
11.Serve the lamb with the thickened sauce.
