Ingredients

1 chicken
3 medium onions , quartered
1 medium carrot , sliced
1 stalk celery , sliced
2 teaspoons salt
8 slices bacon
15 medium potatoes ( about 8 pounds )
salt and pepper
2 medium onions , diced

4 ounces butter

Instructions

1.In a large pot, add the chicken, quartered onions, sliced carrot, sliced celery, and 2 teaspoons of salt. Add enough water to cover and bring to a boil.
2.Reduce heat and let simmer until the chicken is cooked through, about 45 minutes.
3.Remove chicken from pot and let cool. Reserve broth.
4.In a large skillet, cook bacon until crispy. Remove from skillet and crumble.
5.Peel and grate the potatoes. Mix with diced onions, sliced carrots, and crumbled bacon.
6.In a separate small saucepan, melt butter. Add 2 cups of reserved broth and bring to a boil.
7.Add melted butter and broth to the potato mixture. Mix well.
8.Preheat oven to 350°F. Grease a 9x13 baking dish.
9.Layer half of the potato mixture in bottom of dish. Place chicken pieces on top. Cover with remaining potato mixture.
10.Bake for 1 1/2 to 2 hours, or until potatoes are cooked through and top is golden brown.
