Ingredients

1 teaspoon paprika , preferably smoked
1 teaspoon dried thyme leaves
1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
4 teaspoons olive oil , divided
1 3/4 pounds bone-in chicken thighs
3 cloves garlic cloves , peeled , thinly sliced
1 cup reduced sodium chicken broth
2 large heads escarole or curly endive , coarsely torn
1/2 cup pine nuts , toasted
This dish features tender and juicy roasted chicken thighs on top of tender braised escarole. The chicken thighs are seasoned with a smoky paprika and thyme rub that gives them a bold flavor. The braised escarole is garlicky and tender, with a bit of crunch from the toasted pine nuts. To make this recipe more hearty, it is topped with melted mozzarella cheese.

Instructions

1.Preheat oven to 425 degrees F.
2.In a small bowl, mix together paprika, thyme, garlic powder, black pepper and 2 teaspoons of olive oil to make a paste.
3.Rub each chicken thigh with paste and place on a baking sheet.
4.Roast for 25-30 minutes or until a meat thermometer inserted into the thickest part of the chicken reaches 165 degrees F.
5.Meanwhile, heat remaining 2 teaspoons of olive oil in a large skillet over medium heat.
6.Add sliced garlic and cook until fragrant, about 1 minute.
7.Add escarole and toss to coat with oil and garlic.
8.Pour chicken broth into the skillet and bring to a simmer.
9.Cover and cook for 5-7 minutes or until leaves of escarole have wilted.
10.Divide braised escarole among plates and top with roasted chicken thighs.
11.Sprinkle with pine nuts and mozzarella cheese.
