Ingredients

2 1/2 cups prunes , pitted
1 cup armagnac
1 quart milk
1 cup sugar
8 egg yolks

Instructions

1.In a saucepan, simmer prunes and armagnac until prunes are soft and tender, about 15 minutes.
2.In a separate saucepan, heat milk and 1/2 cup of sugar until sugar has dissolved.
3.In a mixing bowl, beat egg yolks with remaining 1/2 cup of sugar until thick and pale yellow in color.
4.Slowly pour the hot milk mixture over the egg yolks, whisking constantly to temper the eggs.
5.Pour the egg and milk mixture back into the saucepan and heat until thick enough to coat the back of a spoon.
6.Strain the mixture through a sieve into a bowl.
7.Puree the prunes in a blender or food processor.
8.Mix the prune puree into the strained mixture and chill in the refrigerator.
9.Transfer the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions.
10.Freeze the ice cream for at least 2 hours to allow it to set.
