Ingredients

3 ounces pasteurized egg yolks
1 ounce white vinegar
1 ounce water
1 tablespoon dry mustard
3 cups vegetable oil
kosher salt , to taste
white pepper , to taste
1 ounce lemon juice
2 ounces capers ( drained and chopped )
2 tablespoons chives ( chopped )
3 tablespoons chervil ( chopped )
3 tablespoons tarragon leaves ( chopped )
1 tablespoon Dijon mustard
salt
Worcestershire sauce , to taste
2 dashes Tabasco sauce
Remoulade is a classic French condiment that has been adapted and popularized in Louisiana, USA. It is traditionally made with mayonnaise, mustard and various herbs and spices to give a tangy and flavorful taste to seafood dishes such as fried catfish and shrimp po’boys. Instructions

1.In a blender, combine the egg yolks, white vinegar and water. Blend on high speed until well mixed.
2.Add dry mustard powder and blend again.
3.With the blender running on low speed, slowly pour in the vegetable oil until it thickens to the desired consistency.
4.Add kosher salt, white pepper, lemon juice, capers, chives, chervil, tarragon leaves, Dijon mustard, salt, Worcestershire sauce and Tabasco sauce. Blend again to combine all ingredients.
5.Taste and adjust seasoning as necessary.
