Ingredients

2 lbs fresh apricots , halved and pitted ( if not available , you may use canned )
1 lemon , juice of
1/2 cup water
5 tablespoons sugar
1 teaspoon arrowroot or 1 teaspoon cornstarch
1 tablespoon brandy ( or almond extract )
1/4 cup slivered almonds
2 cups all-purpose flour
1/4 lb chilled butter , cubed
1/4 cup sugar
1 egg , beaten
3 eggs
3/8 cup vanilla sugar
1/2 cup all-purpose flour
1 2/3 cups milk

Instructions

1.Preheat the oven to 350°F.

3.Press the mixture evenly onto the bottom and up the sides of a tart pan, then refrigerate for 10 minutes.
4.In another bowl, whisk together the eggs, vanilla sugar, and all-purpose flour.
5.Add milk and stir until smooth.
6.Arrange apricot halves, cut side down on pastry.
7.Mix water, sugar, lemon juice and arrowroot in a small saucepan.
8.Bring to a boil over medium heat, stirring constantly until thickened.
9.Stir in brandy or almond extract and baste apricots with half of the mixture.
10.Pour remaining mixture over custard.
11.Sprinkle with almonds.
12.Bake until custard is set and crust is golden brown for approximately 35-40 minutes.
