Ingredients

250 gr . brown onions
80 gr . swiss cheese
30 gr . butter
3 tablespoons olive oil
1 glass white wine ( ar . 100 ml )
1 tablespoon plain flour
4 slices toasted farmhouse bread
salt & pepper
Soupe à L'oignon Gratinée or French Onion Soup is a classic French dish that originated in the 18th century. The soup is made of caramelized onions with a crusty bread slice and melted cheese on top. It is a bistro staple and casual dining dish that has been replicated in homes around the world. Instructions

1.Peel onions and slice them into thin rings.
2.Melt the butter, add olive oil, and heat on medium heat in a large pot. Add onions and gently cook until they are caramelised for 15-20 minutes, stirring frequently.
3.Add flour to the onions, stir and cook for another 5 minutes. Add wine and let it reduce a bit. Add 1.5 litres of water and keep stirring.
4.Cook the soup for 20 minutes on low heat with the pot covered. The soup should be thick and fragrant. Season with salt and pepper.
5.Place a slice of bread in the bowl, pour in the soup, sprinkle grated cheese generously on top of each serving.
6.Bake the bowls on a baking tray at 400 F/ 200 C for 5-7 minutes until the cheese is melted and golden.
