Ingredients

4 large boneless skinless chicken breast halves

4 teaspoons extra virgin olive oil
1 minced shallot
1 cup good california Chardonnay wine
1 cup chicken stock
1/2 cup heavy cream
4 tablespoons unsalted butter

Instructions

1.Preheat oven to 375 degrees F.
2.In a small mixing bowl, combine goat cheese, tarragon, parsley, chervil, a generous pinch of white pepper, and salt.
3.Spread this mixture over one side of each chicken breast, pressing it down gently.
4.In a large oven-safe skillet, heat olive oil over medium heat and cook chicken, cheese side down, until golden brown, about 4 minutes.
5.Flip chicken and add minced shallot; sauté for 1-2 minutes.
6.Add chardonnay and chicken stock and bring to a simmer.
7.Place skillet in preheated oven and bake for 10-12 minutes or until chicken is cooked through.
8.Remove skillet from oven and set aside chicken, covering it with foil to keep warm.
9.Place skillet back on stove and simmar for 3-4 minutes, until reduced to a thicker consistency.
10.Add heavy cream to skillet and stir to combine. Cook for 1-2 minutes, until sauce thickens more.
11.Remove skillet from heat and whisk in butter. Pour sauce over chicken and serve immediately.
