Ingredients

1 tablespoon shallots , minced or 1 tablespoon green onion , minced white part only
1 tablespoon butter
1/4 lb mushroom , finely chopped
1 teaspoon lemon juice
1 teaspoon dried herbs , any combination of dill , basil , tarragon , oregano
1 package cream cheese ( garlic and herb )
0.5 package frozen puff pastry
1 egg ( for egg wash , mix with 1 tablespoon water )

Instructions

1.Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.

3.Add the finely chopped mushrooms, dried herbs, and lemon juice. Continue to sauté until the mushrooms are golden brown and all the moisture has evaporated.
4.Remove the skillet from heat and let cool completely.
5.On a lightly floured surface, roll out the puff pastry to 1/8 inch thickness and cut into 8 squares.
6.Spread a tablespoon of cream cheese onto each square, leaving a 1/4 inch border around the edges.
7.Spoon the mushroom mixture over the cream cheese.
8.Fold the opposite corners of each square to create a diamond shape. Pinch the edges together to seal.
9.Brush each roll with the egg wash.
10.Place the rolls on the prepared baking sheet and bake for 20-25 minutes or until golden brown.
