Ingredients

1/4 cup sun-dried tomato , packed without oil
1 teaspoon chopped fresh thyme
1/2 teaspoon salt
1/2 teaspoon sweet Hungarian paprika

2 large red bell peppers , cut into 1/4-inch strips
1 large yellow bell pepper , cut into 1/4-inch strips
1 small zucchini , halved lengthwise and thinly sliced ( about 1/2 cup )
1 small yellow squash , halved lengthwise and thinly sliced ( about 1/2 cup )
1 medium yellow onion , peeled , halved lengthwise , and thinly sliced ( about 3/4 cup )
2 teaspoons olive oil , divided
cooking spray
1 1/2 ounces sourdough bread
2 tablespoons grated fresh parmigiano-reggiano cheese

Instructions

1.Preheat oven to 375 degrees F.
2.In a small bowl, combine boiling water, sun-dried tomatoes, thyme, salt, paprika, and black pepper. Set aside.
3.In a large bowl, toss together red and yellow bell peppers, zucchini, yellow squash, onion, and 1 teaspoon of olive oil.
4.Coat a 9x13 inch baking dish with cooking spray. Pour the mixture from step 2 into the dish.
5.Layer the vegetable mixture on top of the tomato mixture. Cover the baking dish with aluminum foil and bake for 45 minutes.
6.Remove from oven and sprinkle with bread crumbs, remaining olive oil, and Parmigiano-Reggiano cheese. Return the dish to the oven and bake uncovered for another 15 minutes or until the top is golden brown and crispy.
