Ingredients

3 eggs
2 cups water
3 cups low sodium chicken broth
2 boneless chicken breasts
11 garlic cloves
1 teaspoon salt
2 bay leaves

6 thin slices of a country-style French bread
1 tablespoon herbes de provence
1/2 teaspoon dried lavender
1/2 teaspoon dried rubbed sage

Instructions

1.In a pot, boil the water and chicken broth over medium heat.
2.Add the chicken breasts, garlic cloves, bay leaves, dried lavender, and dried rubbed sage.
3.Cover the pot and let it cook for 20 minutes or until the chicken is fully cooked.
4.Take out the chicken and garlic cloves, and squeeze the garlic out of its skin into a separate bowl.
5.Shred the chicken and set aside.
6.Pour the broth through a strainer and discard the bay leaves.
7.Return the broth to the pot and add the shredded chicken back in.
8.In a pan, heat up the olive oil over medium heat.
9.Add the French bread slices and toast until golden brown.
10.In a separate bowl, mix together the grated parmesan, herbes de provence, dried parsley, and black pepper.
11.Place the toasted bread slices in the soup bowls.
12.Add the broth mixture to the bowls, on top of the bread slices.
13.Add a little of the garlic puree to each bowl and stir.
14.Sprinkle the cheese mixture on top of each bowl.
15.Drizzle olive oil over the cheese and serve.
