Ingredients

2 cups boneless skinless chicken thighs
6 tablespoons unsalted butter , divided
1 tablespoon olive oil
salt & pepper
4 cups sliced mushrooms
1 teaspoon dried herbes de provence , divided
1 cup dry white wine , divided
1 medium yellow onion , finely chopped
1 large garlic clove , minced
3 tablespoons flour
1 cup chicken broth , up to 1 cup
1 cup heavy cream
salt & pepper , to taste
1 sheet puff pastry , thawed

Chicken Friand, also known as Tourte Au Poulet Et Champignons, is a French-inspired dish that combines tender chicken, sautéed mushrooms, and a savory cream sauce, baked in a puff pastry crust. Instructions

1.Preheat oven to 400F.
2.In a large skillet, heat 2 tablespoons of butter and olive oil over medium-high heat.
3.Season chicken with salt & pepper, and cook until browned on both sides. Remove from pan and set aside.
4.In the same skillet, sauté mushrooms with 1/2 teaspoon of herbes de provence until tender for 5-7 minutes, and set a side.
5.In the same skillet, add 2 tablespoons of butter, onions, garlic, and remaining herbes de provence until onions are translucent for about 5 minutes.
6.Whisk in flour until smooth, and gradually stir in white wine, chicken broth, and remaining butter until mixture is heated through.
7.Bring mixture to a boil and whisk in heavy cream and season with salt & pepper. Cook until mixture is thickened for about 5 minutes.
8.Roll out puff pastry, and cut into 8-inch squares or desired shapes.
9.Fill each square pastry dough with a spoonful of chicken, mushrooms, and enough sauce, then fold the edges together and press to seal.
10.Brush the pastries with an egg wash, and place on a baking sheet lined with parchment paper.
11.Bake in the oven until pastry is golden brown and puffed, for about 20-25 minutes.
