Ingredients

2 tablespoons unsalted butter

1 1/2 cups milk
1/2 lb fresh mild Italian sausage , casing removed ( loose )
1 small onion , chopped ( about 1/2 cup )
2 garlic cloves , minced
1/2 teaspoon dried herbes de provence , crushed
1/2 cup dry white wine
1 can peeled tomatoes , undrained ( pureed in a blender or food processor )

1 pinch crushed red pepper flakes
6 sheets no-boil lasagna noodles
1 1/2 cups comte cheese ( or a combination about 6 ounces ) or 1 1/2 cups emmenthaler cheese , shredded ( or a combination about 6 ounces )

Instructions

1.Heat up a medium saucepan over medium heat. Melt the unsalted butter in the pan and gradually add in the all-purpose flour. Stir quickly and keep stirring for about a minute. Make sure there are no lumps in the mixture.
2.Mix in the freshly ground nutmeg, salt, and black pepper to taste. Keep stirring the mixture while adding in the milk. Make sure the mixture is smooth and doesn't have any lumps.
3.Let the sauce simmer for about 5 minutes, keep stirring it. Then, turn the heat off and set aside.
4.Preheat the oven to 375 degrees F. Heat up a large skillet over medium-high heat. Add in the fresh mild Italian sausage, onion, garlic cloves, and dried herbes de provence. Cook and stir the ingredients together until the sausage is no longer pink. This should take about 5-7 minutes.
5.Add in the dry white wine and the pureed peeled tomatoes. Keep stirring the ingredients together until the mixture comes to a boil. Then, reduce the heat and let the mixture simmer for about 15 minutes. Make sure the mixture thickens.
6.Line the bottom of an 8 inch square baking dish with 2 lasagna noodles. Spread half of the tomato sausage mixture over the noodles, then pour half of the cheese sauce over the top.
7.Repeat the process with another layer of 2 lasagna noodles, then the remaining tomato sausage mixture and cheese sauce. Sprinkle the remaining cheese over the top of the dish.
8.Bake the lasagna for 30 minutes, or until the cheese is melted and the lasagna is heated through. Let it cool for a few minutes, then serve and enjoy!
