Ingredients

1 medium navel orange
1/4 cup granulated sugar
2 tablespoons cornstarch

Instructions

1.Preheat the oven to 375°F (190°C). Grease a 1 1/2-quart (1.4 L) soufflé dish with butter and coat with sugar.
2.With a sharp knife, remove the rind from the orange in long strips and cut the strips into very thin slivers. Set the slivers aside.
3.Squeeze the juice from the orange and set the juice aside in a small bowl.
4.In a medium-sized saucepan, whisk together the granulated sugar and cornstarch. Gradually whisk in the water and reserved orange juice. Cook over medium heat, stirring constantly, until the mixture comes to a boil and thickens, about 2 minutes. Remove from heat and set aside.
5.In a large bowl, using an electric mixer set on high speed, beat the egg whites and cream of tartar together until stiff peaks form, about 5 minutes.
6.Fold in the saffron and orange zest into the egg mixture until well combined.
7.Slowly pour the orange juice mixture over the egg mixture and gently fold until just combined.
8.Pour the mixture into the prepared soufflé dish and sprinkle the top with the reserved orange slivers.
9.Bake until the soufflé is golden brown and puffed, about 25-30 minutes. Avoid opening the oven door while it's baking.
10.Dust with confectioners' sugar before serving.
