Ingredients

1/4 cup olive oil
1 stalk celery , minced
1/2 medium onion , minced
2 cloves garlic , pressed
2 thick cut bone-in pork chops
1 whole skinless , bone-in chicken breast
1 can tomato puree
1 can tomato paste
1 cup water
3 jars colossal green olives , with pits
3 eggs , divided and beaten
1/4 cup grated Parmesan cheese
1 teaspoon ground nutmeg
1 lemon , zested
flour for dredging
bread crumbs
vegetable oil for deep frying

Instructions

1.Heat olive oil in a large pot over medium-high heat. Add celery, onion, and garlic and sauté for 5-7 minutes.
2.Add pork chops and chicken breast to the pot and cook until browned on all sides.
3.Add tomato puree, tomato paste, and water to the pot and stir until well combined. Bring to a boil, then reduce heat and let simmer for 1 hour.
4.Remove pork chops and chicken breast from the pot and let cool. Once cool, shred the meat and set aside.
5.Drain the liquid from the jars of olives and remove the pits.
6.In a large bowl, combine shredded pork, chicken, 2 beaten eggs, Parmesan cheese, ground nutmeg, and lemon zest.
7.Stuff each olive with the pork and chicken mixture.
8.In separate bowls, add the remaining beaten egg and flour for dredging.
9.Dip each stuffed olive in the flour, then the egg, and then the bread crumbs, making sure to coat each one well.
10.Heat vegetable oil in a deep frying pan over medium-high heat. Fry the olives for 2-3 minutes, or until golden brown.
11.Remove the olives from the pan and let drain on a paper towel-lined plate before serving.
