Ingredients

1 lb baby carrots , with green tops
3 fresh thyme sprigs
2 sage sprigs
4 chicken leg quarters , skinned
1/2 teaspoon kosher salt

1 tablespoon butter
1 tablespoon olive oil
1 lb cremini mushroom , quartered
3/4 cup dry white wine
2 cups reduced-sodium fat-free chicken broth
10 ounces pearl onions , peeled
1 tablespoon fresh thyme , chopped
1 tablespoon fresh sage , chopped

Instructions

1.In a large bowl, toss carrots, thyme, and sage with seasoning.
2.Season chicken legs with salt and pepper on both sides.
3.Dredge chicken legs in flour, shaking off the excess. Set aside.
4.Turn on the sauté function of your 8-qt pressure cooker.
5.Add butter and oil to the pot. Once butter is melted, add chicken legs and sear for 3 minutes on each side or until golden brown. Remove and set aside.
6.In the same pot, add mushrooms and sauté for 3 minutes, or until lightly browned.
7.Add the wine, chicken broth, pearl onions, and chopped herbs. Stir well and scrape any brown bits that may have stuck to the bottom of the pan.
8.Return the chicken legs back to the pot and place on top of the mushroom mixture.
9.Secure the lid and set the pressure valve to SEAL.
10.Cook on HIGH pressure for 20 minutes and allow the pressure to release naturally for 6-8 minutes before quick releasing any remaining pressure.
