Ingredients

2 turkey tenderloins
2 tablespoons melted butter
2 tablespoons Dijon mustard
6 pieces havarti cheese
2/3 cup fine dry breadcrumb
1/4 cup flour
3 tablespoons grated parmesan cheese
1 teaspoon dried thyme leaves
1/2 teaspoon seasoning salt
1/3 cup heavy cream
1 egg , beaten

Instructions

1.Preheat oven to 375°F.
2.Cut each turkey tenderloin lengthwise through the center until almost cut through.
3.Open like a book. Brush inside of each with melted butter. Spread Dijon mustard on each inside of the meat. Place 3 slices Havarti cheese on one half of each tenderloin, fold over other half.
4.In a bowl, combine bread crumbs, flour, grated parmesan, thyme, and seasoning salt.
5.In another bowl, combine heavy cream and beaten egg.
6.Dredge each turkey tenderloin in breadcrumb mixture until coated, then in egg mixture, and then once again in breadcrumb mixture.
7.Place on a greased baking sheet.
8.Bake for 30 to 35 minutes or until the internal temperature of the turkey is 165°F.
9.Rest on a cutting board for 5 to 10 minutes before slicing and serving.
