4 egg whites , at room temperature
2 cups sugar
2 cups water
black food coloring
1/2 hot syrup , from Macarons recipe
4 egg yolks
1 egg
1/2 cup cold butter , cubed
1 teaspoon vanilla extract

Instructions

1.Mix the almond powder and icing sugar in a food processor to make the base.

4.Fold the egg whites into the almond-sugar mixture in stages.
5.Pipe out the macarons shells on a baking sheet.
6.Let it rest for 30 minutes before baking.
7.Prepare the filling by whisking egg yolks, whole egg, and sugar until pale and fluffy.
8.Cook it on medium heat until thickened, continue to stir until the mixture cools down.
9.Add cubed butter and whisk until the mixture is smooth, then continue adding vanilla extract, and black food coloring.
10.Once the shells are cooked, let them cool down.
11.Add a dollop of filling to each macaron shell before sandwiching them.
