Ingredients

1 cup small dried white bean , rinsed
4 cups cold water
2 lbs boneless lamb shoulder , fat trimmed , cut into 1 inch cubes
1 large onion , chopped
1 medium carrot , pared , shredded
2 garlic cloves , minced
1/2 teaspoon dried thyme leaves
1 can tomato sauce ( 225 g )
1 bay leaf
1 smoked ham hock ( about 1 pound or 450 g )
1 lb Polish sausage or 1 lb smoked sausage ( 450 g )
2 tablespoons butter or 2 tablespoons margarine ( 30 mL )
1 tablespoon salad oil
1 1/2 cups french fresh breadcrumbs

Instructions

1.Soak the white beans overnight in plenty of cold water.
2.Preheat oven to 325 degrees F (165 degrees C).
3.Drain the beans, put them in the clay cooker with cold water, and boil for a minute.
4.Drain again, cover with fresh cold water.
5.Add lamb, onion, carrot, garlic, thyme, tomato sauce, and bay leaf to the clay cooker.
6.Cover and cook for 1 hour.
7.Add smoked ham hock and sausage.
8.Cover and cook for another 1 1/2 hours.
9.While the cassoulet is cooking, melt butter or margarine in a small skillet.
10.Add breadcrumbs, stirring constantly until golden brown.
11.Seven minutes before the cassoulet is done, spread breadcrumbs on top.
12.Cook until golden brown (about 7 minutes).
