2 tablespoons walnut pieces
2 tablespoons plump golden raisins

Instructions

1.Preheat oven to 325 degrees.
2.Peel, core and slice apples. In a saute pan, melt 2 tablespoons butter. Add apples, vanilla bean scrapings and 2 tablespoons sugar. Cook over medium heat until golden brown and caramelized.
3.Spread 1/2 tablespoon butter on each slice of bread. Cut slices in half and arrange in pie pan as shown using 4 halves per section.
4.In a medium saucepan, heat cream until just about to boil. In a medium bowl, whisk egg yolks, egg, sugar, and vanilla bean scrapings. Slowly whisk hot cream into the egg mixture. Pour mixture over bread slices. Press bread down to submerge it in the custard. Let stand for 5 minutes.
5.Add apple slices to the top of each section of bread. Sprinkle walnuts and raisins over the top.
6.Place pie pan in a large baking dish and fill pan with enough hot water to reach halfway up the sides of the pie pan. Bake until set, about 1 hour. Cool before slicing and serving.
