Ingredients

250 g bacon , sliced
4 tablespoons olive oil
1 kg lean stewing beef , cut into 1 1/2 2 inch cubes
2 pieces carrots , cubed
1 medium onion , diced
salt and pepper , to taste
2 tablespoons flour
1 liter dry red wine , young and full bodied
4 cups beef stock
1 tablespoon tomato paste
10 -15 pieces shallots
3 tablespoons butter , unsalted
bouquet garni
500 g fresh mushrooms , quartered
Boeuf Bourguignon is a classic French dish that is typically made with beef red wine, onions, and mushrooms. It originated in the Burgundy region of France, which is known for its excellent wine and cuisine. This dish was featured prominently in the film Julie & Julia, which chronicled a woman's journey to cook all of the recipes from Julia Child's cookbook, Mastering the Art of French Cooking.

Instructions

1.Preheat the oven to 325°F.
2.In a large Dutch oven, fry the bacon until crispy and brown. Remove the bacon and set it aside.
3.In the same pot, add 3 tablespoons of olive oil and sauté the beef until browned on all sides. Remove the beef and set it aside.
4.In the same pot, sauté the onion and carrots until the onion is translucent. Add the flour and stir until well combined.
5.Add the wine, beef stock, tomato paste, and bouquet garni. Stir until well combined and season with salt and pepper to taste.
6.Add the beef and bacon back into the pot and bring it to a simmer. Cover the pot and place it into the oven for 2 to 2 1/2 hours.
7.In a separate pan, heat the butter and remaining olive oil. Add the shallots and cook until caramelized.
8.Remove the pot from the oven, add the caramelized shallots and mushrooms to the pot and stir to combine. Cover the pot and return to the oven for another 30 minutes.
