Ingredients

2 1/2 cups cold heavy cream ( divided use , NOT ultra pasteurized )
2 tablespoons unsalted butter , cut into pieces
10 ounces white chocolate , chopped I use Lindt
1 teaspoon vanilla extract
3/4 teaspoon mint extract ( the organic kind )
white chocolate , shavings for topping
fresh mint leaves ( to garnish )
White-Chocolate-Mint Mousse is a delightful dessert that combines the creaminess of white chocolate with the refreshing taste of mint. Instructions

1.Pour 1 1/2 cups of heavy cream into a saucepan and add in the unsalted butter. Heat over low heat, stirring constantly until the butter has melted completely.
2.Remove the saucepan from heat and add in the chopped white chocolate, stirring until melted.
3.Stir in the vanilla extract and mint extract until well combined. Allow the mixture to cool to room temperature.
4.Pour the remaining 1 cup of heavy cream into a separate bowl and beat with an electric mixer until stiff peaks form. Fold the whipped cream into the chocolate mixture gently until well combined.
5.Pour the mousse into serving glasses and allow to cool in the fridge for at least one hour.
6.Once set, top with white chocolate shavings and garnish with fresh mint leaves.
