Ingredients

2 pounds chicken giblets
1 cup water
1/2 teaspoon salt
4 cups salted water
2 cups long grain white rice , uncooked
2 cups grated Parmesan cheese
1/2 cup marinara sauce
1/4 cup dry bread crumbs
2 large eggs
2 tablespoons chopped fresh parsley
salt and freshly ground black pepper to taste
1 cup dry bread crumbs for coating

Instructions

1.In a large pot, bring the chicken giblets, water, and salt to a boil. Reduce the heat, cover, and simmer for 30 minutes or until the giblets are cooked through.
2.Remove the giblets from the pot and let them cool. Reserve the broth for rice cooking.
3.In the same pot, bring 4 cups of salted water to a boil. Stir in the rice, reduce the heat, cover, and simmer for 18-20 minutes or until the rice is tender.
4.Remove the pot from the heat and stir in the Parmesan cheese, marinara sauce, 1/4 cup bread crumbs, eggs, parsley, salt, and pepper.
5.Add the cooked giblets and mix well.
6.Let the mixture cool, then refrigerate it for at least 30 minutes.
7.Preheat the oil in a deep-fryer or heavy pot.
8.Using a cookie scoop or spoon, form the mixture into small croquettes.
9.Coat each croquette with bread crumbs.
10.Fry the croquettes in batches until they are golden brown.
11.Drain excess oil on paper towels.
