4 medium granny smith apples , peeled cored and diced
1 lemon , juice of
1/2 cup packed light brown sugar
1/4 teaspoon ground cinnamon
1 vanilla bean , split and scraped
2 large eggs
1/4 cup whole milk
2 tablespoons sugar
1 tablespoon ground cinnamon
2 tablespoons unsalted butter , for greasing ramekins
2 tablespoons sugar , for ramekins , plus extra for top
20 slices brioche bread , crust removed
6 egg yolks
1/2 cup lightly packed light brown sugar
1/3 cup calvados or 1/3 cup apple liqueur
1 teaspoon ground cinnamon
1 vanilla bean , split and scraped

Apple Charlotte is a traditional French dessert that originates from the 18th century. It is essentially a bread pudding made with layers of bread and sautéed apples, baked until golden and crispy on top. This recipe, from Chef Tyler Florence, adds a twist to the classic dessert by serving it with a Cinnamon Sabayon. This is a custard-like sauce made with eggs, sugar, and cinnamon, and is the perfect accompaniment to the warm and comforting flavors of the Apple Charlotte. Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Melt butter in a large sauté pan over medium-high heat. Add apples, lemon juice, brown sugar, cinnamon, and vanilla bean and cook for 6-8 minutes, stirring occasionally.
3.In a separate bowl, whisk together eggs, milk, sugar, and cinnamon until well combined.
4.Grease 6 ramekins with butter and sprinkle with sugar.
5.Cut the bread into triangles and layer the bread in the ramekins, making sure to overlap the edges to create a solid base.
6.Spoon the apple mixture into each ramekin and top with a layer of bread slices.
7.Pour the egg mixture over the bread slices, making sure to cover all the bread slices.
8.Sprinkle the top with extra sugar and place the ramekins on a baking sheet.
9.Bake for 25-30 minutes, or until the tops are golden brown.
10.In a metal mixing bowl, whisk together egg yolks, brown sugar, calvados, cinnamon, vanilla bean, and water until well combined.
11.Place the mixing bowl over a pot of simmering water and whisk continuously for about 4-5 minutes, or until the mixture has thickened and doubled in size.
12.Serve the Apple Charlotte hot out of the oven with a generous helping of the Cinnamon Sabayon on top.
