8 boneless skinless chicken thighs
1 teaspoon salt

4 slices bacon , cut into 1/2-inch pieces

12 ounces white mushrooms or 12 ounces baby portabella mushrooms , quartered
2 carrots , peeled and cut into 1/2-inch pieces
1 medium onion , chopped
2 garlic cloves , chopped
1/2 cup chicken broth
1 1/2 cups merlot red wine
2 large fresh thyme sprigs

Instructions

1.Preheat the oven to 325°F (160°C).

9.Cover the pot and bake in the oven for 1-1.5 hours or until the chicken is tender and the sauce has thickened.
10.Serve hot with bread or potatoes.
