20 sea scallops or 1 lb bay scallop
2 1/2 tablespoons butter , divided
2 shallots , sliced
1 garlic clove , chopped
1/4 lb chopped mushroom ( a mix of cremini , shitake , and oyster )
3 tablespoons flour
1/3 cup dry vermouth
1/2 cup dry white wine
1/2 cup fish stock or 1/2 cup clam juice
1 cup half-and-half
2 sheets thawed frozen puff pastry
1/3 cup chopped fresh flat leaf parsley
1 egg , beaten with
2 tablespoons milk
fresh herb , for decorating the pastry ( such as sage , basil , chervil , parsley , thyme , or whatever you like )
2 lemons
olive oil , for drizzling
kosher salt
fresh ground black pepper

Instructions

1.Preheat oven to 400°F (200°C).

8.Cut the puff pastry into circles that fit snugly on top of the ramekins. Cut a small slit in the center to allow steam to escape. Brush the pastry with egg wash.
9.Place the ramekins on a baking sheet and bake until the pastry is golden brown, about 20 minutes.
10.In a small bowl, combine the chopped parsley, a drizzle of olive oil, and the zest of 2 lemons. Top each pot pie with a spoonful of the parsley mixture and a sprig of fresh herbs. Serve hot.
