Ingredients

1 bag lentils
10 cups chicken stock , about 10 cup ( I use chicken soup base for this , it 's more cost effective . But that is your choice )
5 slices bacon
1 lb Italian sausage
5 stalks celery
1 big softball sized onion , any type
5 medium carrots
1 can tomatoes , diced . Preferably fire roasted
5 garlic cloves
red pepper flakes
black pepper
italian seasoning ( or oregano , basil , thyme and rosemary )

Instructions

1.Rinse the lentils in cold water and set them in a pot to simmer with 10 cups of chicken stock.
2.In a separate pan, fry the bacon until it's crispy then remove it from the pan and set aside on a paper towel.
3.Next, crumble the Italian sausage into the hot pan and cook until there's no pink. Then, remove the sausage from the pan, and drain any excess fat.
4.Add chopped celery, onion and carrots to the pan and sauté until the onions start to become translucent.
5.Mince garlic and add it and the Italian seasoning to the pan, letting it cook for about a minute.
6.Add the contents of the pan to the pot with the lentils and chicken stock, as well as a can of diced tomatoes.
7.Bring to a boil, then reduce heat and let simmer uncovered for about 45 minutes or until the lentils are tender.
8.Add salt, red pepper flakes, and black pepper to taste.
9.Garnish with the crumbled bacon and serve hot.
