Ingredients

3 garlic cloves , crushed , divided
1 1/2 teaspoons seasoning salt
1/4 teaspoon fresh ground pepper
8 filet mignon steaks , 1-inch thick
6 tablespoons butter , divided

1/2 lb fresh mushrooms , sliced
3 tablespoons all-purpose flour
2 teaspoons tomato paste
3/4 cup dry red wine
1 cup chicken broth
1/2 cup beef broth
1/2 cup water
1/4 teaspoon Worcestershire sauce
2 tablespoons currant jelly

Instructions

1.Preheat your oven to 375°F.
2.Combine 2 cloves of crushed garlic, seasoning salt and pepper in a small bowl. Rub the spice mixture on both sides of the filet mignon steaks.
3.Melt 4 tablespoons of butter in a large skillet over medium-high heat.
4.Cook the steaks in the skillet for about 6-8 minutes per side until cooked to your preference, then transfer them to an oven safe platter and keep warm.
5.Deglaze the skillet with brandy, stirring to scrape up any bits stuck to the bottom.
6.Melt 2 tablespoons of butter in the same skillet, then add in mushrooms and remaining garlic. Cook for about 5 minutes until browned and tender.
7.Sprinkle flour over the mushrooms and stir to combine, then add in tomato paste and cook for another minute.
8.Add the red wine, chicken broth, beef broth, water, Worcestershire sauce and currant jelly into the skillet. Bring to a boil and reduce until thickened, stirring occasionally for about 10-12 minutes.
9.Remove the skillet from the heat and strain the sauce over the filet mignon steaks before serving.
